Yes, based on Demco's specifications, your measurement should work.
The Demco 8550046 Recon for Recessed Gooseneck Ball Mount requires that the top of the gooseneck ball be no lower than 13/16" below the deck (bed) surface.
You measured:
7/8" from the bed surface to the top of the ball
A key detail is whether that 7/8" measurement means the ball is:
7/8" below the bed surface (recessed), or
7/8" above the bed surface (protruding).
If your ball is 7/8" below the bed surface, it is only 1/16" deeper than Demco's 13/16" maximum specification, so it would technically be outside the published spec.
If your ball is 7/8" above the bed surface, then you're well within the requirement and the hitch should fit.
